Ofe owerri is a delicious traditional soup from owerri, imo state. It is basically made with assorted fish and green mixed vegetables
When it comes down to the type of vegetable to use, its actually a matter of preference. Two different types of leaves are commonly used for ofe owerri which can mixture of any of this.Ukazi[okazi] and ugu, ora and ukazi or ora and ukazi. Spinach leave can also be used.




SO LETS START

INGREDIENTS
2 large smoked fish [preferably Asa fish]
3 medium pieces stock fish
1 cup smoked prawn [use ground crayfish as substitute]
300 gram assorted beef
4 cocoyam corms or 2 cooking spoonful pounded cocoyam paste
2 handful ukazi leaves [if you use dry ukazi, grind in blender before ue]
2 handful ugu leaves or spinach or ora leaves
2 cooking spoonful palmoil
2 stock cubes
salt and peper to taste



DIRECTIONS
1 Wash and shred the vegetables and leave to strain in a sieve, set aside
2 Boil the cocoyam corms until soft and pound/ blend to form a paste, set aside
3 Rinse the dried prawns and set aside
4 Soak the smoked fish in hot water to soften up a bit,then wash throughly with hot water and carefully clean out the inside without breaking the fish to pieces then set aside
4 Wash the beef and stock fish and place in the water

COOKING DIRECTIONS
1 Season the meat and stock fish with stock cube , salt, and any of your favorite meat seasoning. Add a little water and leave to cook until tender. You can add more water if need be
2 Add the cleaned dried prawns, pepper, stock cube and palmoil
Mix throughly and add cocoyam paste bit by bit. Cover and leave to cook until the cocoyam paste dissolves completely. Stir continously so that the soup does not burn at the bottom
3 Add the smoked fish and boil for 3 minutes [ adding the fish at this stage keeps it from breaking to pieces in the soup]
4 Then add the vegetables. if you are using dried ukazi leaves; add this first and cook for 5 mins before adding the ugu/spinach/ora leaves
5 Cook for 3 minutes and add salt to taste


AND YOUR DELICIOUS OFE OWERRI IS REAADY
